Ingredients
200g smoked cod’s roe
100g stale bread, crusts removed
2 garlic cloves, minced
Juice of 1 lemon
100ml olive oil (plus extra for drizzling)
50ml vegetable oil
50ml water (adjust as needed)
Freshly ground black pepper
Optional: parsley, finely chopped, for garnish
Instructions
Prepare the bread: Soak the stale bread in water for a minute, then squeeze out the excess moisture.
Blend the base: In a food processor, combine the bread, smoked cod’s roe, and minced garlic. Blend until smooth.
Incorporate liquids: Gradually add the olive oil and vegetable oil while blending. Add the lemon juice and a bit of water to achieve a creamy consistency.
Season: Taste and adjust with more lemon juice or black pepper, if needed.
Serve: Transfer to a serving bowl, drizzle with olive oil, and garnish with parsley. Serve with warm pita bread or vegetable sticks.
